Scramble eggs with Truffles
Ingredients for 2-3 persons:
6 eggs,
50g butter,
1 can of Truffles 20g in tiny pieces,
2 table spoons of heavy fresh cream,
Salt.
Place the 25g of warm butter in a pan with a heavy bottom, 6 eggs lightly
beaten, the mixed Truffles and then add salt. Cook very slowly, stirring
constantly with a wooden spoon. As soon as the mixture becomes smooth,
remove the pan from the heat. Keep beating and add extra 25g butter in
small pieces as well as 2 table spoons of heavy fresh cream.
Serve immediately.
